RESEARCH TOPICS

My projects more particularly concern bioprocesses based on fermentations. They aim to characterize and optimize fermentations (operating conditions, stoichiometry and kinetics) by associating tools from microbiology and chemical engineering The fields of application are fermented beverages, interactions between microorganisms in mixed cultures, biocontrol of foods contaminated by mycotoxins, production of bioactive molecules from natural sources, production of yeasts and lactic acid bacteria as starters, production of molecules platform in the framework of biorefinery.
