When surface active species, such as proteins, phospholipids or particles accumulate at the interface, that interface in itself becomes complex, due to the presence of an interfacial microstructure that develops. As a consequence the description of the interface needs to go beyond a mere surface or interfacial tension.
This makes everything a bit more complicated but on the other hand also offers the possibility to engineer materials. I will talk about the different methods to separate the different contributions and about different ways to impart stability to an interface.
